Is it possible to mirror a local (non-system, data-only) Volume to a iSCSI Volume with Server 2008 R1? To add the mirror itself shouldn't be the problem. But after restarting the server, the iSCSI volume couldn't be ready early enough. So the RAID could be initiated with a missing disc. Right? I found a related article here:

Is it possible to get the iSCSI-initiator started/connected before the RAID 1 is tried to be initiated?
