Virtual Disk Failure - Lost Physical Disk (Which is actually virtual)

I have a Windows Server 2012 R2 I use for one of our large file server. It was built on a VMware VSAN with 3 x 1.75 TB disks pooled together to make a larger 5.25 TB drive for the shares. I couldn't afford the space and the virtual disk was provisioned with a simple layout.

Well, one of the Physical disks (Virtual) from VMware's side had a corrupt VMDK file to it. That completely wrecked the File Shares and took down the Virtual Disk. I have tried to add disks, do a disk repair, everything humanly possible that I can think of. I need to try and extract as many of the files as I can from the 2 remaining disks. 

I was hoping to be able to add a replacement disk and fill the pool up and let the disks try and salvage something.
